I'm not FPVing (yet ;)), but here's a camera which might be interesting:
HackHD - 1080p Camera Module

According to them:
The HackHD is essentially a stripped-down GoPro. It can do full 1080P at 30 FPS, run from a battery and is easily controlled from a microcontroller. It's got a wide-angle lens and can even be enclosed in GoPro enclosures to make it water proof.
Here's an example video (the first part where it looks straight into the sun might be of value to you FPVers) and here's a side-by-side comparison with the GoPro (Hero1).

I occasionally order things from SparkFun, so I'm curious what the FPVers think of this camera... If it's any good I might add it to my next order :)

Or you could buy direct from HackHD.com and save yourself $20!

Or you could buy the HK WIng Cam II and get full 1080p @30fps AND 720 at 60fps. And it's only $95ish plus shipping.

60fps = sweet sexy video. 30fps = barf jumpy not smooth video, okay for most people, but not for videophiles. Also the Hack HD is nowhere GOpro quality.

Gopro v1, maybe, not Gopro 2.

HackHD.com special finished. Back up to $USD179. Starts to make GoPro look slightly more affordable!
