Neuron 2 80amp

I'm new to electric and have finally had my first flights with the neuron 80 esc, all good but wondered what the best setting would be for an aerobatic plane regarding slow start, soft start and soft brake. Also when I kill the throttle there is an annoying beep, is there a way to turn that off without turning off the bleep on start up?
