When setting up a new model and once I have mechanically set the control surface throws as best I can to the model manufacturers specifications, I fine tune the final desired movements on the Tx. As far as I can see there are two ways to do this. Either by adjusting the weight or the end points. What are the pros and cons of each? How does the two options affect trims?
For setting dual rates I generally adjust the weight and have high/low rates set to a switch. Is this correct?

If setting throws, then endpoints are "best". You adjust each end independently, while weight will adjust both sides at the same time.
In either case, trims should give you 25% of the available throw.
