I am currently looking for ways to be able to use an arduino or similar to communicate with my QX7s so that a value given by the arduino is able to be used as a channel input.
There is a very crude way of doing this, which involves using the analog output of the arduino to emulate one of the potentiometer inputs, but this is , well, really very crude and not ideal.
Are there any other ways to get data into the taranis to then use as a channel input?...

Either trainer port or telemetry.

In Inputs you can select a telemetry value as source and apply a custom scaling.
Note that we know nothing at all of your purpose and what kind of stuff you want to send, if you need fast refresh (as fast as sticks) you'll probably rather want to use the trainer signal.

I have multiple projects that I want to use an arduino to either augment my normal flying controls, or to send specific data to the receiver (sometimes a 2nd receiver).

With ersky9x you could have a headtracker sending the signal via Bluetooth to the radio, as long as you have the bluetooth dongle installed in the radio of course, and the headtracker sends the right signal type.. I think Ersky9x uses SBUS, but at a different baud rate for trainer over BT..
