Telemetry from my RC sailing boat

Hi,
New to telemetry but not to RC.
I'm racing RC sailing boats and I am looking for help on the following project:

I am looking to get on my phone (ideally so I can glance at it while I sail my boat) just the actual speed of my boat and its heading.
I am looking to record everything while the telemetry system is on so I can play it back at home to review the data.
It must be as light as possible or it will affect too much the speed of the boat (overall the boat is approx 4kg)

I'm using a Spektrum Dx6 in DSMX with a AR620 Rx.

So I suspect I will need :
1-a GPS module to give me the heading and the speed like this one (Matek Systems - GPS & Compass M8Q-5883)
2- some telemetry system in 433Mhz as it is legal to use this frequency in my country like this one (Holybro - Telemetry Radio Set V3 - 100mw 433MHz)
3- I need some ground software like iNav I suspect.

I'm missing a few elements here I'm sure. Like a flight controller, a f4 or f7 type like this Matek Systems - Flight Controller F405-WING maybe?

As you can see I have some rough idea of what I need to make this work but I'm looking for some diagram showing all the wiring of the various components I need to make this work before I buy anything.

I presume I will need to connect the GPS module to the flight controller and the RF telemetry module on the boat to that FC too.
Not looking to send any data to the FC just interested to get these data from the boat to my phone/laptop.

Then for the shore I will most likely need my laptop, connected to the other RF telemetry module and iNav but then how do I get speed and heading on my phone? (maybe using easygui app?)

Hi,
I should point out that I have no need to send instructions to my boat as I will fully control it from my Tx.
So may be I'm over complicating things here as standard telemetry exists to sends data from the vehicle to the Tx but I can't find a module that will capture and send me speed and heading in real time, hence why I thought to this telemetry setup.

What you describe is similar to what I built 10 years ago for my planes.
A GPS module with a 433Mhz transceiver for the plane and a corresponding ground station transceiver feeding a Palm computer. This displayed several data and logged all GPS records onto an SD-card.
Later I put the ground receiver into the radio and modified the fw to show the data directly on the radio (NMEA-version).
