I am unsure if I am posting this in the right place.
I just got my extra 300s 160 all set up and the O's 160fx running. I am having a little problem with throttle control. When I start to give it throttle the servo starts moving instantly as it should. The problem is that it is at full throttle at 5/8ths of the stick. How and where do I adjust this?

I was thinking about it some last night and I put an offset in the throttle to set the idle. I did it this way so that I could flip a switch and it would completely close the throttle as a kill switch. The offset was 40% just what the stick is off.
I am guessing that that is not the best way to do that. So, how do you program a switch to override the limits of a channel?

First of all, did you calibrate the sticks and pots of your radio?
- Go to Radio Setup / Calibration menu and follow the instructions.
Look at the main screen that shows the channel output as bars. Does the throttle channel go to full when the throttle stick is at full throttle?
- Before you program the travel of the engine servo, adjust the linkage without any special programming. That will allow for very little adjustment.
It is difficult to give you advice when we can't see your setup.. Also it would help if you post your radio's eeprom here..
To kill the motor use a "Safety Switch" on the throttle channel.

I take it you are putting your throttle trim all the way down right? Well, that could affect the top of the servo movement, and the result could be what you're seeing...
Go to "Model Setup / General" menu scroll down to "Thr-Trim" and turn it ON.
What this does is, the trim affects only the lower part of the stick travel, not touching the top. That means your throttle will go to full even if the trim is completely down..

Thank you both, totally new to nitro so was unaware of the T-trim function. I hadn't used trim to set the idle, I used an offset. It came to me last night that that was what was throwing the throttle off. I found out about the T-trim function this morning scanning through the manual for a correct was to set this up.
God electric is SO much easier but gets expensive to convert a scale aircraft.

You posted in "stock firmware (fly sky th9x)" so given you didn't say what radio you have anywhere in the thread when we read it we assume you have a 9X with stock firmware, for which instructions would be completely different.
