how may I change the default switch position to be -100 low on a taranis x7?

I am setting up Taranis to fly spektrum SAFE BNF models following the guide emulating a DX5e the inputs on the document states

Inputs
Rud 70 Rud E20 SG low
85 Rud E20 SG- Mid
100 Rud E20 --- Hi

The problem is the default position of the 3 position switch starts out in mode 3 which is +100.
I would like to know how to change the default of the switch to -100 low

I'm a little confused by your question. There is no default when a switch is used as a switch (as opposed to a source).
When used as a source SG↑ (up) is -100, SG- (Mid) is 0 and SG↓ (down) is 100. When used as a switch you use SG↑ SG- or SG↓ . In your case where you have 70 Rud E20 SG you would use either SG ↑ or SG↓ depending on which way you want.

Thanq that was the info I was looking for. I wish there was a complete document that went over all the programing info and sample programs and mixes

The documentation that thebrairs0 did is the best I have seen. It is for openTX 2.1 but most applies to 2.2 viewtopic.php?f=45&t=8724

Just be sure to set all channel limits to 80% when dealing with a model intended for use with a Spektrum transmitter.

In OpenTX, 100% travel is equivalent to 125% in a Spektrum transmitter. Not only will the servos overtravel if the Taranis is set to 100% limits, but in some cases the SAFE system reacts badly to the increased pulse width. Also, the ESC is expecting to see Spektrum limits.

Also note that the aileron and rudder channels will need to be reversed.
