So, before I plunge into the Smartieparts board and ER9x/eepe, which I am learning as I go, 1) is there a way to backup my current model settings, mixes, etc for the 6 distinct models I have already on my stock firmware 9x? 2) Or even import them somehow using eepe onto the new flash? I am guessing that I should just go thru the transmitter one by one and try to write all the settings down first and then reprogram ER9x.

No way to transfer settings. You just have to make notes. ER9X does things differently, so you have to focus on the desired outcomes. Record not just the settings but the results in terms of measured control movements.
