Yes, in openxsensor.ino you defined it. I dont know, if the code allows to change it on the fly. If I remember wel one user claiming about the jump was using a X8R receiver (and so SPORT protocol).

Yes, Frsky telemetry protocol does not transmit digital (only integer) so formatting has to done on Tx side.
On OXS you only can apply some multiplier/divider that in some cases can help.
